We started Étiquette because we believe in making alcohol free wine that is truly worthy of a great meal.
After tasting the alcohol free wines available, we knew there had to be a better way. We believe everyone deserves a delicious drink, not just a substitute for forgettable, traditional wine.

Conventional wisdom held that our intended approach was technically impossible... But wait, we’re getting ahead of ourselves.

Dealcoholized
& Proxies
Dealcoholized wines begin as full-strength alcoholic wines that are subjected to intensive, industrial processes to remove their alcohol.
three most common ways to dealcoholize wine
1.Vacuum Distillation
The wine is boiled inside of a powerful vacuum.
2.Spinning Cone Method
A high speed centrifuge separates the wine while nitrogen gas is added.
3. Reverse Osmosis
The wine is forced through a fine membrane at a high pressure and then boiled.
Each industrial dealcoholization process has its own pros and cons
All result in wine that has been stripped of its nose, mouthfeel, complexity, body, and finish to varying degrees.
Proxies take a different approach
Proxies aren’t trying to be wine, so rather than start with grapes, proxies try to approximate the experience of drinking wine by mimicking its complexity through the use of other ingredients like vinegars, juices, botanicals, teas, citrus and bitters.
It is hard to generalize about proxies, except to say that by design you would never confuse them with traditional wine.
We didn’t want our approach to involve industrial machinery or ingredients you’d put in a smoothie.
And so… we went back to the basics of fermentation.
